The 300-square-meter production house is perfectly integrated within our offices in the heart of Bangkok city, for a glimpse of Maison René. Here, passion and precision come together as our skilled team performs the difficult tasks of handling hundreds of kilograms of carefully selected meat and pork. Every step, from the artistic curing rooms to the controlled environments of raw coolers and packing stations, demonstrates our dedication to quality. Embracing the artisanal ethos, we refuse automation, ensuring a hands-on and human eyes approach to crafting our salami. Ensuring quality control is the highest priority. Starting with raw material arrival and continuing through all stages until our salami is prepared for shipping out. We are constantly creating novel recipes and seasonal specials with the greatest locally sourced, high-welfare produce.

Only the best cuts of beef and pig are hand-selected and trimmed by our skilled team. We will never accept tolerance for anything outside our standards. We believe that greatness is in the details.
1.2 Curated Seasoning for Original Flavor: At Maison René, we are the artisans in charge of seasoning. Our spice blend is a curated blend that combines the richness of European flavors with regional Thai ingredients. We use Greek salt, and Spanish paprika, Thai’s Jinda Chili mixed with Royal Cambodia Black pepper. Every batch is a harmonious blend of flavors that elevates our cured meats' taste
1.3 The Science and Practice of White Flora: Like the mould on aged soft cheeses, the powdery substance is a naturally occurring edible mould.
Our white flora's distinctive contribution to our cured meats is the finishing touch. Our cold cuts are uniquely flavored by this natural fermentation process. We don't take any quick cuts. It's the method that gives Maison René its unmatched taste; it's more than just a procedure.
Mould is more than just an odd sight—it's an essential component of our charcuterie game. Its principal responsibility? preventing harmful microorganisms from getting to the salami and guaranteeing an impeccable maturing procedure.
In our specially designed humidity and temperature-controlled drying facilities, our salamis and chorizos undergo fermentation before entering a "moulding" phase. Penicillium is the type of mold that we desire on our salamis since it is safe.
